Some of the major advantages of freeze dried foods are:
- The nutritional components and flavour remain unchanged: food is freeze dried in a low temperature environment removing water and oxygen, the primary causes of food deterioration, but the flavour, aroma and nutritional values remain unchanged
- Foods retain their original shape and texture: there is limited to no shrinkage because removal of water at low temperatures maintains the moisture channels and food fibers
- Foods retain their original colour: low temperatures reduce enzyme activity aiding in retention of original colour
- Foods rehydrate well: the process allows evenly distributed spaces to remain between the food fibers, much like a sponge, enabling the food to recover its original shape in a very quick period of time when water is added
